Roasted Root Medley

As you guys are well aware, I just completed my 21 Day Cleanse and the food truly was ‘TO DIE FOR!”   I was blown away at the amazing recipes we were given on this and that my husband couldn’t wait to eat them every night.

For those of you that don’t know, I DON’T COOK!   So this was a huge new journey for me to take over the cooking reigns from my hubby and do all of the cooking.    I was shocked that I could cook and it wasn’t hard, just time consuming.   My husband’s birthday even came in the middle of the cleanse and he didn’t even want to go out to dinner because the food was so amazing on this cleanse.  CAN YOU BELIEVE THAT??     This is actually the dish I made for his birthday.   It was so delish and a little crispy; just right  And so easy to make.

Ingredients:

(makes 1 serving)

1/4 medium sweet potato or yam, cut into 1 inch chunks

1/2 medium carrot, cut into 1 inch chunks

1/2 medium beet, cut into 1 inch chunks

1/4 medium onion, peeled, cut into large wedges

2 tsp olive oil

Himalayan salt, to taste

Directions

Preheat oven to 400.  Combine sweet potato, carrot, beet, onion, oil, and salt; mix well.   Arrange vegetables in a single layer on a baking sheet.  Bake for 40-50 minutes, or until tender, turning once or twice.
