Healthy Reese’s ?!?!?!?

YES, you read that right!  I actually made healthy Reese’s Eggs!

If you know ME, I am obsessed with all things CHOCOLATE & PEANUT BUTTER!

When I saw a recipe for Reese’s Eggs: healthy version…  I HAD to make them and boy were they delish!!!  Try these out for size…..

Reese’s “Healthified” Eggs

2/3 C    Natural Peanut Butter (must be natural)

1 TB     Pure Maple Syrup

1-2 TB   Coconut Flour

3.5 OZ  70% or higher Dark Chocolate Bar

Coarse Sea Salt (optional)

In a medium bowl, mix first 3 ingredients.  Add more flour if needed (should be cookie dough consistency)  Use a cookie scoop and drop onto cookie sheet lined with parchment paper.  Freeze for 20 minutes.

Melt chocolate in microwave for approx 1 minute.  Dip each PB piece into the warm chocolate, put back onto the parchment paper and sprinkle with sea salt, if desired.    Put back into freezer for up to one hour.  I recommend storing them in the freezer until ready to eat.
