GG does Sushi!!!!

You may have read awhile back about my 21 Day Cleanse journey.  During that, not only did I lose so much weight, but truly learned so much about food and how it effects our bodies.  I learned how to eat slowly and actually enjoy the meal and how to eat a massive amount of fruits and veggies and boy does it make you feel 100 x’s better.

BUT, the greatest thing I learned…..was how to make SUSHI!!  Who knew that Coach GG, WHO DOES NOT COOK, could make sushi???   I amazed myself!  And it was DELISH and EASY!   Check out the recipe below…

So who wants to try???

Nori Rolls with Tempeh and Veggies

  • ½  tsp. olive oil

  • 1 strip smoky tempeh strips (we love the tempeh bacon strips – smoked maple flavor)

  • 1 sheet nori seaweed (great buy on Amazon with the bamboo roller)

  • 1/2 cup cooked brown rice

  • ¼ avocado, thinly sliced in strips

  • ¼ carrot, cut into thin matchsticks strips

  • ¼ cucumber, cut into thin matchstick strips

  • Braggs Aminos (as a dipping sauce – tastes like soy sauce)

Heat oil and fry tempeh strips until crisp. Put nori sheet on cutting board. Place rice on nori and spread to cover half the sheet lengthwise. Place tempeh, avocado, carrot, and cucumber on rice, then sprinkle with Braggs Liquid Aminos. Roll up from bottom, being careful not to tear nori. Wet far end of nori to seal. Cut into 6 slices
