Hi Everybody!
Anyone else getting a little STRESSED thinking about Thanksgiving being in just a FEW days?! Are you still looking for a last minute healthy recipe to share for your Thanksgiving celebration?
Look no further. This weekend, we had one of TWO Thanksgiving celebrations and I gave a new recipe, Pumpkin Hummus, a try. Rave reviews, especially when paired with Trader Joe’s Pumpkin Tortilla Chips. Easy enough for a novice cook like me to make, which is definitely a BONUS!

PUMPKIN HUMMUS
Ingredients
2/3 cup pumpkin puree
1 (15 oz.) can chickpeas, drained and rinsed
2 tablespoons of lemon
2 garlic cloves
2 tablespoons tahini
4 tablespoons extra virgin olive oil, divided
½ teaspoon sea salt, plus more to taste as desired
½ teaspoon ground cumin, plus more to taste as desired
¼ teaspoon ground cinnamon
1/4 teaspoon of paprika
Directions:

Combine all ingredients in the bowl of a food processor or high-speed blender. Process or blend until smooth, stopping occasionally to scrape down sides of bowl or pitcher.

Drizzle 1 tablespoon extra virgin olive oil over the top and serve with raw veggies, chips and/or crackers. Also, wonderful as a topping for sweet potatoes, salads and wraps.
